Ingredients for 4:
4 medium bell peppers
500gr minced turkey thigh or breast (whatever is your favourite piece)
hand full of pitted green olives
3 spring onions
150gr cremini mushrooms
hand full of cherry tomatoes
coriander or parsley
salt and pepper
chilli flakes (optional)
coriander powder and cumin powder
1 medium egg
Wash and dry the bell peppers. Carefully cut off the top of the pepper, paying attention to not ruin it and to keep it whole. Remove any seeds from the peppers.
Wash very well the mushrooms, paying attention that they do not absorb too much water. Chop the mushrooms finely. Wash and cut into small pieces the cherry tomatoes, the green olives and the spring onions. Finely chop the washed coriander. Mix all the chopped ingredients with the minced turkey in a bowl season and mix in the egg. Mix everything very well and with a spoon fill the bell peppers.

Put in the oven at 180 degrees Celsius or 356 Fahrenheit. Cook until the turkey is well cooked. Help yourself with a thermometer cook to 70 degrees celsius or 158 fahrenheit. If you don’t have a thermometer cut in half and check inside if the meat is fully cooked.
