Il Bacio, the kiss, is an Organic Winery and an Agriturism in the area of Chianti. The family that owns the estate is absolutely delightful. Franco and Sonia have 3 children. Daniele, the middle son works actively in the business. Franco and Daniele take care of the vines and the wine making. Sonia takes care of the guest in the Agriturism. Of course they all help one another. Every time I go there I just feel part of the family. I sometimes see Nonna, the grandmother, and sometimes you bump into the others of the family and also friends. I love seeing Agata their Bernese dog. She is the good giant that loves to be cuddled. They also have cats lying and sleeping in the best spots ever. They have a beautiful donkey that is adorable. For me this place is paradise.
I would highly recommend to stay here. They have amazing apartments and a pool surrounded by vineyards and olive groves. While relaxing by the pool you can do some Tuscan meditation. The Tuscan meditation is drinking wine and enjoying the calming vibes surrounding this special place. The only noises you will hear are the birds and the animals. It is immersed in the countryside of Tavarnelle Val di Pesa.
In this post I would like to share the tasting I did a couple of days ago of 2 of their wines.
Savium 2011 IGT
The grape varieties in this wine are Sangiovese, Merlot and Cabernet Sauvignon. Same quantities of each grape. It was aged in wood for 10 months and the in bottle for 12 months
The colour is a medium ruby red with an orange tinge on the rim.
The aromas the first things that I smell are the spicy notes like liquorice, coffee, after you start smelling blackberries and then hint of roses. The aromas are intense, persistent and complex. The nose of this wine is absolutely amazing.
On the palate the wine is fresh and warm with velvety tannins. It is a very well balanced wine. The after taste is of liquorice and dark chocolate. The wine is persistent and never seems to end.
If I would have to match this wine with a dish I would say a lovely Ragu’ sauce or even a lasagna. Something with a bit of substance but nothing way to heavy to out balance the perfect wedding.
Cabernet 2012 IGT
The grape variety is a 100% Cabernet Sauvignon. The wine has been aged for 10 months in wood, 6 months in stainless steel and 6 months in bottle.
The colour is a medium ruby red and is slightly a bit darker than Savium.
The aromas are of coffee, vanilla, dark chocolate, then you start smelling some of the fruit notes like dark cherries and blackberries, there is a little hint of mint at the very end and it is very mild. The aromas are intense and complex.
On the palate the wine is fresh and warm. The tannins on this wine are younger and you can feel them. Of course with a bit more time they will smooth out. It is a very well balanced wine.
The after taste is that of coffee and cherries. It has an intense long finishing.
The match for this wine would be a nice Florentine steak or even wild boar.
